Fall Favorites - a recipe round-up

It's the LAST week of October! What? Where did this month go? I just realized that it's time to change the clocks back this weekend...always a true sign of the coming of winter, when it's dark before I leave work! We only have 3 games left of football season - time really is flying! One of my favorite ways to warm up on cold autumn nights is to get in the kitchen and make something fall-ish.

Like so many of you, I get a lot of my recipe inspiration from the internet, and occasionally some of my favorite cookbooks. I don't often create my very own original recipes, which is why this isn't a food blog! But there are SO MANY AWESOME food blogs out there - that I wanted to share with you some of my go-to fall recipes that I seem to come back to time after time. Links are provided for all of them so you can make them yourself, and I will note if I make any changes in my own kitchen. I hope you will come to love these like I do - and chances are you'll probably find some pretty awesome food blogs while you're linking!

I usually crock pot this stew to make prep time easier. I use chicken breasts and leave out the olives (yuck!). This is a great recipe because you can really add whatever veggies and seasonings you want! Make this one for a tailgate and stay warm and satisfied for the whole game!

I'm a sucker for apple pie. I make this every year for Thanksgiving, and at least a few other times in a year! In fact...I might just need to make this sometime this week. Anytime is a good time for pie! My favorite part about this recipe is the crisp topping and the crust bottom. The best of both worlds! I sub potato starch for the cornstarch, and sometimes brown rice flour instead of sweet rice. For the filling, I usually reduce the white sugar and add some agave or stevia.

These are a perfect treat for a Saturday morning with a latte and a friend. I don't always make the icing, but it truly is the "icing on the cake" and makes a huge difference!

roasted butternut squash with pumpkin seed pesto
epicurious

I originally got this recipe from a handout at work. It was my first time ever eating butternut squash and turned me into a huge fan! The pesto is amazing and will make anyone who may be wary of squash change their mind.

Um WOW. These seems like more of a splurge than they really are. We had them at Thanksgiving last year. I'm thinking a fun Halloween treat this year? Another easy tailgating treat!

pumpkin oatmeal
honey what's cooking?

I make this over and over and over all winter long. I use rice milk and don't add walnuts. So creamy and warm and delish!

pumpkin swirl cocoa brownies

So...a little bit of a splurge. I used Earth Balance in place of the butter, Enjoy Life chocolate chips, Bob's Red Mill All-Purpose GF flour to make them gluten free, and only used 1/4 cup sugar and added a 1/2 cup applesauce. They were still very sweet and indulgent!

Ok - shameless plug. I had to use one of my own recipes. But it truly is one of my favorites!
One of my favorite blogs "The Lean Green Bean" also just shared a big fall recipe round-up that has more delicious looking recipes! I can't wait to try some of them - especially the crockpot applesauce and the sweet potato brownies!

Great post! I love to start Soup Sundays when the weather gets colder. Nothing better than soup and bread cooking all day while we relax and watch football.

I get most of my recipes now from Pinterest and I use allrecipes.com a lot. I'm am now going through the recipes from budgetbytes.com. She has some great meals, like sweet potato and chirizo enchiladas. Never knew that would be a great combo.

Soup, bread and football sound like a great Sunday to me! And those enchiladas sound delish!
