Who's watching the Super Bowl this weekend? It's a little bit of a big deal here in my home state of Colorado - with the Denver Broncos making it back to the big game after 15 years! I'm not really a Broncos fan, but since my Chargers aren't in it, I'll be cheering for the Blue and Orange I suppose. You're welcome Broncos Friends (aka my ENTIRE Facebook feed)
I had big plans to do an awesome Super Bowl food post for y'all - show you all kinds of ways to make those diet-busting football favorites healthier for your whole family. But alas...sometimes life gets in the way. I haven't been in the kitchen testing and photographing new recipes for you, in fact, we've been lucky to get dinner on the table this week. Last night dinner was mini-pizzas on english muffins. Cereal has been discussed. I'm not sure why - but I didn't do any meal planning this weekend and in turn, all hope for prepped, healthy meals went out the window. I guess I have a new goal for this upcoming weekend.
All that being said - I don't have some ground-breaking new zero-calorie nacho recipe. SORRY. But that doesn't mean there aren't a lot of great, healthy ideas out there in internet-land! You don't even have to make all those crazy new recipes that you just pinned on Pinterest. Just make a few smart swaps! Put together a veggie platter in the shape of a football. Try homemade pizzas with extra veggies instead of takeout. Bake your wings instead of fry. Try hummus or guacamole for dips instead of queso and creamy dips. Keep it basic!
What's on MY Super Bowl Menu? Well, shockingly, I've thought about it a little bit. Apparently more than I've been thinking about the current day's dinner. We're going to go simple this year. I think we'll do some loaded sweet potatoes with mexican toppings (beans, salsa, guac), baked chicken wings (so easy, seriously, make them yourself) and some veggies and pizza hummus. I like to make rice krispie bars for dessert - I use green field coloring and press them into a rectangle pan. I use white frosting to draw yard lines and I found some fun football figurines that I decorate the top with. I have an awesome picture from last year's bars but I can't find it! I'll add it when I do. These bars are not really healthy, but not the worst either.

Sometimes you just have to roll with the punches. This week I'm thankful that it's been above zero when I leave for work (that hasn't happened for seriously, months) and that I've gotten to enjoy my poor excuse of a dinner with my husband every night. Some weeks you just can't do it all and sometimes...that's ok!
