How's your weekend going? I'm loving the Colorado sunshine...I've gotten out for a great walk, helped at our football booster golf tournament and done plenty of relaxing. The big debate is whether it's worth it to set up our backyard pool before baby arrives. I want to get it set up soon if we're going to do it!
For today's post I thought I would give you a nice little photo dump of what I've been up to in the last week. I'm not complaining AT ALL...but I've been in such a simple little life rhythm lately that I don't always feel like I have anything super new or exciting to post about! I've been teaching classes, doing some training, taking 1:30pm naps everyday and trying to get everything ready for baby! Loving it!

My latest OBSESSION. I created this iced latte kind of accidentally last weekend and I think I've made it at least 4 more times since then. The hubby is also quite impressed and has been asking for them. Super easy...we make a double shot of espresso in our CBTL Single Serve Machine. Put the espresso in the freezer for about an hour. It should be icy but not solid. If you wait too long just let it sit on your counter for a few minutes, but you won't wait too long because you need this drink as quickly as possible. Throw in a few ice cubes and cover with your favorite milk. I've been using chocolate almond milk. It's crazy rich and indulgent. For a little milder version I use half chocolate almond milk and half unsweetened rice milk. I get giddy about how the layers look Every.Single.Time.
This was my lunch I think 3 times this week but I never get sick of it! It's the Asian-Inspired Mandarin Quinoa Salad from Once Upon a Cutting Board. We added some grilled chicken to make it more of a main dish, but it's super protein packed even without it! Also I used canned mandarins...I don't think they sell fresh ones here?
Have you tried the new (maybe they aren't new but I just discovered them) brown rice crackers from Food Should Taste Good? I love this brand for their chips - but these crackers might be even better. Sometimes you just want a GOOD gluten free cracker and this fits the bill. These are the Roasted Red Pepper ones. I've been snacking on them with my homemade garlic & basil hummus.
It's not a good week unless you've taken some Sweaty Selfies right? I have been feeling really good lately and working out makes me feel even better. It's empowering to get a good workout in when you've got lots of baby bump going on. I did a simple strength circuit this week: 3x10 of lunges, squats, pushups and dips. I've gotta use weights for my pushups because I have a sore wrist!
I spent a few of my workouts here at the pool this week. Why, oh why have I not done this sooner? The low impact feels so good on my body, and I would probably be much less sore if I hadn't take a year long sabbatical from the pool! I'll share more about my pool workout in an upcoming post.
It's also not a good week unless you have FRIDAY NIGHT PIZZA NIGHT! Apologies for the bad picture, but look at the veggie filled butterfly I created! I used Pillsbury pizza crust (not my favorite but super easy) and covered with peppers, onions, spinach, pepperoni and cheese. MMMM....mmmm....
I've been getting in touch with my creative side lately and painted these to canvases this week for the nursery. I always forget how much I love painting until I'm doing it! I'm ready for another project now! Once we get the nursery more put together I'll have to post about our DIY/Budget Friendly baby room.
And I can't have a random photo blog post without a picture of my best friend/puppy Oakley. Seriously, how can you ever had a bad day with this sweet face licking you all.the.time. This little princess is in for a reality check when she's not the only one vying for mom's attention. Until then we are enjoying lots of sun soaking and couch cuddling together.
