There are few things I like better than breakfast. We've discussed this before. If it's a "breakfast food" I pretty much love it, and that includes eggs! I'm a little picky with my eggs though, I don't like them running across my plate OR smiling at me. Give me scrambled please! One of the ways I've been eating eggs most of my life is by microwaving them and putting them on an egg sandwich. I thought this was a common-knowledge way to make eggs until I noticed that anyone I mentioned this method to was completely intrigued! So, maybe some of you haven't heard of this either?
The first person I taught to make these eggs was my little brother. He was 4 and would make them by himself before anyone was awake. I would find him "reading" the sports section and eating an egg sandwich. I know, I created a kitchen prodigy. The second person I taught didn't catch on quite as quickly. That was my best friend. She actually just had a baby and I am SO STOKED to have her join in this crazy motherhood journey with me! Who would have thought? But back to the eggs. In high school, she practically lived at my house and I would make her egg sandwiches in the morning. What can I say? In my house, food is love, even when you're 16. One day she asked; "How do you make these? I want to do it at home!" I told her "You put the egg in the bowl, microwave for a minute and voila!". There was a disaster in her microwave the next morning...apparently I needed to add in the all-important FIRST step..."CRACK THE EGG". Oh Lord I love her.
So my friends - how to make the easiest eggs you'll ever make, in the microwave. So easy, a 4 year old can do it. As long as you remember to crack the egg.
Step 1: Spray a small glass bowl with some oil. The size of the bowl determines the size of your cooked egg, so choose wisely. I like to pick a bowl similar in size to my toast!
Step 2: Crack the egg into the bowl.
Step 3: Stir it with a whisk or fork to break the yolk and blend it together. This is almost as important as cracking the egg. If you don't break the yolk, it WILL explode in your microwave.
Step 4: Sprinkle some salt and pepper on top of the egg.
Step 5: Cover with a paper towel and microwave on high for 30-60 seconds. Everyone's microwave power varies, so you'll have to figure out what works. If you lift the cooked egg up and it's runny, add a few more seconds. Unless you like it runny - your call!

I like to put some cheese (dairy free usually) on the top as soon as it comes out of the microwave and cover it again so it melts down. Then I put the egg on some fresh toast and breakfast away! I've done other variations too, adding ham or sausage before I microwave it, or stirring a spoonful of salsa into the egg before it cooks. The possibilities are really endless!
I love how easy these are, and they also make a perfect healthy on-the-go meal. I'll wrap one up in tinfoil and hand it to my husband on his way to the office when he doesn't have time for breakfast.
